Wheat flakes made from wheat with a high starch content. In addition to wheat malt, raw wheat can also be used to make wheat beer. While the former is typical of Bavarian wheat beers, the raw wheat gives the Belgian "witbier" its characteristic refreshing, "wheatier" taste. Wheat flakes do not contain enzymes and are easier to use than raw wheat grains because they do not need to be cooked beforehand and can be added directly to the mash.
